Eric Ripert is a French chef (four stars from The New York Times and three stars from the Michelin Guide) and owner since 1994 of the restaurant Le Bernardin in Manhattan. He explains that during his first experience as a manager at the age of 24, he naturally reproduced the violent behaviors, shouts and humiliations that he himself had suffered in his apprenticeship. Until he realized one night at home that he felt terrible. After some readings that confirmed his awareness, he turned around, and drew up all the benefits that this brought to his business.
